Beets are a root food. You can find them in any grocery produce
section. If you don't have a juicer you can boil the beets. Most
people eat beets as pickled beets. They are quite good if you like
pickled foods.

My natural hair color is black, so I wanted black hair. What I got
with indigo and beet juice was Demi Moore brown. Henna had turned
it to a black red and the indigo/beet just mellowed the red. I later
used straight indigo and brought it to black. I have some gray hair
streaks which are now redish brown. The combination of black and
brown looks natural and that is what I was after.

Since you have ginger hair I would probably mix the henna and indigo
in equal amounts adding a little walnut powder. If that was not the
color you were looking for then use a second mix of indigo with
cassia and some henna, but start with a henna/indigo foundation.
Like I said before, it's trial and error.
