I would add cloves both times; the tiny amount you need to add to the
mix to henna just the gray is likely to boil dry if you simmer the cloves. I
hennaed my whole head, then six days later rehennaed my beard (not
just the gray part) using leftovers. I added the cloves to that batch in
the beginning. I'd wait until the henna color is developed, which should
take a day or two.

I don't drink coffee, so I can't advise you on what will smell good with
it. I use tea tree oil, which I've been using for over ten years to clean
myself, so I like the smell, even if others think it's funky.
