Thanks for the suggestions! I'd think that agar and flax seed gel would probably both
be good substitutes for the pectin - can't say that I've tried either of them as I've been
happy with the pectin version. My guess is that agar would be the better of the two as
the gel you get from flax seeds is quite "slimy" and would probably be a bit too runny
for a henna gel.

Flax seeds are easily found here as well - agar takes a bit more searching but is
usually found in Asian food stores - and as you point out, both are cheap (as is
pectin).

As for the naturalness - pectin is on the same scale as both agar and flax seeds. It's
usually derived from apples and used as a thickener in jelly/jam that you eat - safe
enough to eat is for me safe enough to put on my scalp. :-)
