Hi Sarah,
I hate to be answering posts because I am new here as well, but I
just wanted to let you know there is life out there, lol.
I think most of the questions are answered somewhere on the site.
There really is a huge volume of info here, and Catherine has said
that its only all up in the last couple of months and there is tons
more to come!

I'm sure under the mixes page esp. if you read Fia's section, you'll
find that orange juice or for that matter almost anything acidic will
work fine. Also, there is a link explaining terps; If you scroll down
this board you'll find I posted a thread called "Terps?" and
Catherine gives the link.

I also wonder about the freshness issue; I can't answer that one for
you, I'm afraid; and I don't understand the wording of your other
question about the cloves? Again, almost anything regarding add-ins
can be found if you have a quick peek at all the links in the mixes
section.
